While the pasta is cooking, combine 1/2 cup of the evaporated milk, eggs, salt, pepper, chicken bouillon, mustard and nutmeg in a medium sized bowl. Drain the pasta and return it to the pot. Add 2 tablespoons of butter and stir to melt. Add the egg mixture and 1/2 of the cheeses and stir to combine. Cook for about 3 minutes. Combine evaporated and regular milks, egg, salt and pepper in the cooker and whisk until smooth. Add the cheese and macaroni, gently stir with a rubber spatula to coat evenly with the milk and cheese mixture. Sprinkle the parmesan on the top. Cover and cook on low until the custard is set in the center and the pasta is tender, 3 1/2-4 hours.

This recipe yields 2 cups of cooked elbow macaroni in milk; modify it if you would like to cook more or less noodles.

Step 1
Pour the milk into the saucepan and place it over medium heat.

Bring the milk to a simmer. If it starts to boil rapidly, reduce the heat to keep the milk from burning onto the bottom of the saucepan.
Cooking macaroni-and-cheese without milk is easy and quite similar to cooking it with milk. The same process is followed, except the milk is substituted with replacement ingredient, such butter and water, or sour cream and yogurt for a thick and creamy consistency.
Step 3
Add the elbow macaroni to the saucepan and stir to remove air bubbles from within the noodles.
Step 4
Cover the saucepan and allow the elbow macaroni to cook in the simmering milk for 15 to 20 minutes or until done. Raise the lid of the saucepan every two to three minutes to stir the milk and noodles.
Step 5
Remove the saucepan from the heat and use the cooked elbow macaroni immediately.
